Sweet, simple, and refreshing, this Sweet Strawberry Tonic may quickly become a new favorite during strawberry season.

Inspired by the magnificent fresh strawberries that greet us each spring, the drink features a homemade strawberry syrup that is very easy to mix up. To create this, you will need a few fresh strawberries, sugar, water, and a little vanilla extract. The full syrup recipe is available via the link in the recipe below, and it is the perfect weekend morning project that will be ready to mix into a great drink by the time your chores are done that afternoon.

Once you have that syrup, the rest of this recipe is very easy: simply mix the syrup with lime and fill your glass with a great tonic water. The syrup takes some of the bitterness out of the tonic and sweetens it just enough without overpowering the drink. Of course, each ingredient can be adjusted to taste and if tonic isn’t around, a ginger ale, club soda, or even sparkling soda could be used instead.
